We present a simplified version of a cocktail featured on our latest cocktail list. Designed as a batch premix that's loaded with the flavours of the festive period, rendering it excellent for a holiday party. Save the extra cordial for morning drinks, sweets, or to make another batch of this cocktail.
The Bikini Cocktail
Yields 10 people
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Cocktail (yields 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Put all the ingredients inside a pan, bring to a light boil, agitating so the sugar melts. Then, take off the stove and let it to cool fully. Transfer into an sealable bottle, close it keeping it chilled, it will last for up to one month.
Preparing the Batch Mix: Mix the specified liquid ingredients into a big jug, leave to sit for one hour, then filter it preferably using cheesecloth, so it's fully clarified.
For serving: Measure 85ml from the premix to a mixing glass filled with ice, gently stirring lightly for one minute to chill. Filter into a cold coupe glass or similar, top with some cranberries and finish by giving it a brief mist of mandarin oil over the top.
